I used this recipe: https://www.errenskitchen.com/homemade-oreo-cookies/ But modified it in the following way: Replaced All-purpose flour and baking powder with Self-Raising. For every 32 cookies using the website auto calculator, I added 1 metric cup self-raising flour to stabilise the dough better. Refrigerated prepared dough for 24 hours. Froze cookies before baking. Baked at 150C for 15 minutes. Used ready to roll icing/fondant for the center 'cream'.
